Best Ever Easy Pecan Pie

Ingredients:

  • 1 pie crust
  • 1 cup roughly chopped pecans
  • 1 cup whole pecans
  • 3 large eggs
  • 1 cup dark or light corn syrup
  • ½ cup packed dark brown sugar
  • 1 ½ tsp pure vanilla extract
  • ¼ cup unsalted butter, melted and slightly cooled
  • ½ tsp salt
  • ½ tsp ground cinnamon

 

Directions:

  1. Preheat the oven to 350°F (177°C)
  2. Spread ½ cup pecans evenly inside the pie crust. Set aside.
  3. In a large bowl using a rubber spatula or wooden spoon, whisk the eggs, corn syrup, brown sugar, vanilla, melted butter, salt, and cinnamon together in a bowl.
  4. Add other ½ cups of roughly chopped pecans
  5. Once completely combined and tick, pour evenly over pecans
  6. Arrange the remaining 1-cup of Pecans on top in a decorative pattern
  7. Bake the pie for 40-50 minutes, or until the top is lightly browned
  8. Remove finished pie from the oven and place on a wire rack to cool completely. The pie filling will settle as it cools.
  9. Slice and serve warm pie or at room temperature. Top with whipped cream and a sprinkle of cinnamon-sugar if desired.
